Light Coconut Sago Pudding

Ingredients

60g Pearl Tapioca
470ml Milk, 2%
100ml Coconut Milk
50ml Brown Rice Syrup
20g Raw sugar
Directions
Add all ingredients to saucepan and bring to boil
Once boiling, reduce to simmer and cook until there the tapioca is almost completely transparent (there will still be little white spots in the centres)
Distribute into bowls and eat or refrigerate if you want to eat it cold.
