Red Flannel Hash

Introduction

This is a basic recipe. A lot of folks get fancy with it, adding ham or pork or corned beef instead of ground beef, adding eggs, drizzling it with wine... I don't go there! LOL This is a basic recipe. A lot of folks get fancy with it, adding ham or pork or corned beef instead of ground beef, adding eggs, drizzling it with wine... I don't go there! LOL
Number of Servings: 6

Ingredients

    1 lb Ground beef, extra lean
    1 c Onions, raw, chopped
    3 c Raw Potato, diced
    1 15oz can (approx 2.25 cup) canned or cooked diced Beets
    1/4 tsp Pepper, black

    1 Tbsp Extra Virgin Olive oil optional...



Directions

Brown the beef. Drain the beets, setting aside the juice for later. Drain the meat if necessary, then add onions and potatoes and allow to cook until potatoes are tender. Add oil if necessary...Add beets. Allow potatoes and beets to brown. Add pepper and drizzle with a little juice to enhance color immediately before serving.

Salt may be added at table if desired, but taste it first! LOL

Serves six.
