275g very ripe pears, peeled, cored and diced
100g fresh cherries
3 medium apples, peeled, cored and diced
125ml grapeseed oil
Juice and zest of 1 lemon
250g plain flour
1.5 tsp bicarbonate of soda
1 tsp baking powder
2) Beat the egg. Add in the oil, lemon juice and zest, followed by the mashed apple.
3) In a large mixing bowl, sift in the flour with the soda and powder. Fold in the diced pear and cherries.
4) Tip the wet mixture into the dry and combine well.
5) Pour into a lined tin and bake at 170 degrees C for about 40-45 minutes, until lightly golden. Cover the top with baking paper or foil during the last 10 minutes.
Serving Size: 1 square (you can cut however many you like)
