Introduction

Very easy very yummy no-milk/no butter cornbread. For a unique southern treat, split a piece and fill with cooked collard greens. Very easy very yummy no-milk/no butter cornbread. For a unique southern treat, split a piece and fill with cooked collard greens.

Ingredients

    2 cups self rising yellow cornmeal
    1.25 cups soymilk
    1 large egg
    .25 cup olive .3 cups pickled jalapeño peppers
    .3 cups shredded montery jack/colby cheese or mex mix (use vegetarian cheese if desired)

Directions

Heat oven to 400º

Combine all ingredients except jalapeños and cheese (use vegetarian cheese for dairy-free)

Pour into oiled pan, add jalapeños to top and sprinkle cheese on top.

Bake 15 -20 minutes until golden and top cracks

Fill a piece with cooked collard greens for a healthy sandwich
