zucchini casserole

Ingredients

    Zucchini, 3 cup, sliced (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Olive Oil, 3 tbsp (remove)
    Ground beef, extra lean, 16 oz (remove)
    *Ragu Spaghetti Sauce (tomato sauce), 1 cup (remove)
    Egg, fresh, 1 large (remove)
    Cottage Cheese, Nonfat, 1 cup (not packed) (remove)
    Parmesan Cheese, grated, 0.25 cup

Directions

Brown zucchini and onion in oil. Place in casserole ( first layer ) . Brown hamburger, add ragu sauce. Stir and add to the casserole. ( 2 nd layer. ) Mix 1 beaten egg, cottage cheese and salt /pepper to taste. pour over first 2 layers. Cover with parmesan cheese or grated cheddar cheese. Bake 350 degrees for 25 to 35 minutes. May add 1/4 tsp cinnamon with salt and pepper.
