Introduction

Chicken, Shrimp and Diced Tomatoes with pepper, onions, mushrooms and garlic with a touch of wine. Serve over pasta. Ingredients

    1. Stop & Shop Canned Diced Tomatoes, 3.5 cup
    2. Chicken Breast, no skin, 1/2lb
    3. Stop & Shop Extra Virgin Olive Oil, 1 tbsp
    4. Sweet peppers (bell), 1 medium
    5. Mushrooms, fresh, 0.5 cup, diced
    6. Onions, raw, 1 cup, chopped
    7. Red Pepper Flakes, 0.5 tsp
    8. Shrimp, cooked, 4 oz (remove)
    9. White Wine, 30 mL (2 tbsp)
    10. Garlic, 2 clove (0.5 tsp)
    11. Basil, 1 tsp
    12. Parsley, dried, 1 tsp
    13. Bay Leaf, 0.5 tsp, crumbled
    14. Oregano, ground, 1 tsp

Directions

1. Saute peppers, mushrooms, onions, and garlic in olive oil until tender.
2. Add diced tomatoes, wine, and seasonings to veggis and bring to boil then reduce to medium heat.
3. In skillet, brown chicken.
4. Add chicken and shrimp to everything else in pan and heat until shrimp is done (opaque).
5. Serve over pasta.
