Spicy home made potato wedges.

Introduction

Any Mexican spice mix should be fine for this, it's what i tend to use, but as that doesn't come up in the list i decided on old el paso taco seasoning as it contains the same spices. Number of Servings: 2

Ingredients

    3 medium potatoes
    2 tsp old El Paso taco seasoning
    10 pumps Fry light spray

Directions

wash the potatoes and cut them into wedges you should get 8 wedges per potato, i prefer to keep the skin on mine but that's up to you.

Next put them on the stove to par biol until they just get soft, roughly 15-20 mins.

while they are softening prep the baking tray with a couple of pumps of fry light to stop the wedges sticking, once the potatoes are ready drain and empty onto the baking tray.

sprinkle over some Mexican spice mix as much or as little as you like depending on how spicy you like your food, mix them about to cover evenly with spice then spray the wedges with about 3 pumps of fry light.

Place in the oven at 180C for 30mins after 15 turn them and spray once more with the fry light (if needed).

Depending on your oven this may take a little longer or you may need the temp higher but your aiming for a golden crispy look.
