Chicken & Veggies

Introduction

I had bought a large amount of chicken breasts discounted at the store & was looking for a way to use these along with all the fresh veggies I had on hand.

It worked out nicely. Will do again!
I had bought a large amount of chicken breasts discounted at the store & was looking for a way to use these along with all the fresh veggies I had on hand.

It worked out nicely. Will do again!

Number of Servings: 6

Ingredients

    olive oil
    chopped onions
    minced garlic
    chicken, cut up as cooking (can substitute canned chicken)
    can of black beans, drained
    chopped up zucchini
    shredded carrots
    chopped or sliced mushrooms
    baby spinach
    chopped tomatoes

Directions

Add olive oil to electric skillet.
Add in chopped onion & minced garlic.
Let chicken cook, cutting up as it cooks.
Add in black beans & the rest of the veggies, spinach last.
Salt & pepper to taste.
You may want to add other fresh herbs or seasonings to your taste.

When cooked & ready to serve, I added shredded Asiago cheese to top off each serving.

Serving Size: Makes 6, 1.5 cup servings.
