Introduction

Number of Servings: 12

Ingredients

    Crust:
    1.5 c flour
    0.5 c sugar
    1 tsp baking powder
    1/4 tsp salt
    1 stick butter
    1 egg
    1 tsp vanilla

    Fruit:
    3 peaches, peeled & sliced
    1 pt blueberries
    1/2 c sugar
    2 Tbsp flour

Directions

Mix dry crust ingredients in food processor. Add butter, pulse to combine coarsely. Add egg & vanilla, pulse several times or until dough balls up. Pat into 9" springform pan (tart pan will also work - baking time will be reduced). Chill 10 minutes.
Mix peaches, blueberries, sugar & flour together. Add to pie pan.
Bake at 375 for 1:15 (tart pan) or 1:30 (springform pan). Cool slightly, then unmold.

Serving Size: Makes 12 slices (9" pan)
