True Chicken Tortilla Soup

Ingredients

    3 Chicken breasts, boneless, skinless
    3-4 qt. chicken broth
    1 small red onion, diced
    2 carrots, diced
    1 potatoe, diced
    1/4 cup tomatoe paste
    1 bay leaf
    2 cloves of garlic
    1/2 teaspoon chipotle chile en adobo, pureed
    comes in a small can
    1 tsp pickled jalapeno chile seeded, chopped comes in a small can
    1 tsp dried oregano, mexican if possible
    1/8 tsp cumin
    salt to taste
    pepper to taste
    1 medium zucchini, sliced 1/4 "
    1 medium yellow squash, sliced 1/4 "
    1/2 red bell pepper (optional) diced
    juice of 1 lime
    2 Tbsp sherry
    1Tsbp chopped cilantro (fresh is best)
    1 Tbsp fresh mint 1/2 tsbp is dried
    Fresh tortilla chips
    1/2 lb jack cheese
    12 slices of avocado

Directions

Cook chicken in broth on simmer for about 10-15 minutes. Remove from broth to let cool.
Combine the broth, red onion, carrots, potato, tomato paste, bay leaf, garlic, chipotle and jalapeno chillies, oregano, cumin, and salt and pepper in sauce pan you used to cook the chicken in. Bring to boil. Reduce heat and simmer 20 minutes. Shred your chicken and add back inot the soup. Add zucchini, squash, lime juice and sherry. Bring again to boil, Reduce heat and simmer 15 minutes, Add cilantro and mint. Stir, then remove from heat.

To assemble lay totilla chips in bottom of bowl, cover with a light cover of jack cheese. Ladle soup over the chips and cheese in the bowl. Sprinkle a small amount of cheese on top and garnish with avocado slices. If you have fresh cilantro, add a sprig on top. Serve immediately. This will serve 4-6 people generously.
