Introduction

Very simple vegetable soup. Good for freezing. Very simple vegetable soup. Good for freezing.
Number of Servings: 6

Ingredients

    1lb ground turkey
    2 can whole canned tomatoes, cut up
    2 cup water
    3 potatoes, chopped
    1 tbsp olive oil
    1 large onion
    2 cup lima beans, frozen
    2 large carrots, chopped
    Salt and pepper to taste

Tips

You can add frozen cream corn midway through cooking to create a more stew-like soup. Be sure to modify the recipe to account for the added calories.


Directions

Brown ground turkey.
Mix all ingredients in pot.
Cook on medium heat until potatoes and carrots are tender.

1 serving size is ~ 1.5 cups
