Ground Turkey and Noodle Casserole

Introduction

Number of Servings: 12

Ingredients

    Salt and pepper
    12 oz bag of Ronzoni Healthy Harvest Extra Wide noodles
    .75 c. grated parmesan
    .75 cup shredded Sargento Reduced Fat Sharp Cheddar Cheese
    1 clove garlic, minced
    .5 cup frozen, chopped onion
    1-28 oz. can Red Gold Petite Diced Tomatoes (juice optional)
    .5 cup grated raw carrots
    1 cup fresh spinach
    20 oz. package Jennio-O Extra Lean Ground Turkey
    1/2 tsp dried oregano
    1.5 tbsp. Smart Balance Omega Oil

Directions

Cook noodles according to package directions, drain and set aside. In a 3-quart pot, warm oil over medium heat. Add onion and garlic and saute for 4 minutes. Increase heat to medium high, add ground turkey and cook, stirring, until turkey is cooked through and no longer pink. Drain and return to pot. Stir tomatoes, salt, pepper, oregano, carrots, spinach and both cheeses into pot, stirring until heated through. Add pasta, stirring for another 4 minutes or so until heated through. Serve.

Serving Size: Makes 12 1-cup servings
