Hearty White Bean Soup

Introduction

This is easy and delicious! Very filling. Prep time is about 15 minutes, but you need to allow additional time for the beans to soak and soften as well. This is easy and delicious! Very filling. Prep time is about 15 minutes, but you need to allow additional time for the beans to soak and soften as well.
Number of Servings: 12

Ingredients

    1 lb dried great northern beans
    6 cups water
    3 carrots, scraped and sliced
    3 stalks of celery, cleaned and sliced
    1 cup chopped onion
    3 cloves garlic minced
    2 cups tomatoes, seeded and chopped
    3 bay leaves
    1 tsp dried basil
    1/2 tsp fresh ground black pepper
    2 TBS olive oil

Directions

Rinse and sort beans; place in a soup pot with 2 inches of water to cover. Bring to a boil; boil for 2 minutes. Remove from heat, cover and let stand to soften for 2 hours or more if necessary. When ready, drain and rinse the beans. Return the beans to the pot and add 6 cups fresh water and all remaining ingredients except the olive oil. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 - 2 hours or until the beans are tender. Discard bay leaves and add the olive oil. Serve with grated parmesan cheese if desired.
