Delicious Pumpkin Muffins

Introduction

Super moist pumpkin muffins Super moist pumpkin muffins
Number of Servings: 34

Ingredients

    (1) 15oz can pumpkin puree
    (3) Tbsp Pumpkin Pie Spice
    (4) Eggs
    (1) Cup Canola Oil
    (2/3) cup water
    (3) Cups white sugar
    (3-1/2) Cups white flour
    (2) Tsp baking soda
    (1-1/2) Tsp salt

Directions

Preheat oven to 350 degrees F

Put your muffin wrappers in the muffin pan

In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.

In a separate bowl, whisk together the flour, baking soda, salt, and pumpkin spice.

Stir the dry ingredients into the pumpkin mixture until just blended.

Pour into muffin pan - each cup should be almost filled to the top.

Bake for about 35-40 minutes in the preheated oven. Muffins are done when toothpick inserted in center comes out clean.

These freeze well!! You should be able to get 34 muffins out of one batch. You could also pour the entire batch into a 13 x 9 pan and bake for about 50-60 min. You could also use 3 normal sized bread pans and bake for 50 min.

Serving Size: Makes 34 muffins

NOTE: The nutritional information for the pumpkin puree contains NET CARBS instead of a normal carb count. Net carbs are the carbs left after you subtract the fiber. Net carb do not affect blood sugar.
