I used to love cheesy noodle casseroles. This cauliflower casserole is a nutrient-dense healthy alternative that still counts as comfort food.

I used to love cheesy noodle casseroles. This cauliflower casserole is a nutrient-dense healthy alternative that still counts as comfort food.


Number of Servings: 4

Ingredients

    Left over lean meats, already cooked - for the recipe calculator, I used 5.4 oz chicken, 1/2 can salmon & 3 oz froz shrimp.
    1 can cream of mushroom or celery soup
    1 500 g bag of frozen cauliflower
    1 med onion, chopped
    4 cloves garlic, diced
    2 cups chopped spinach
    3 stalks celery, diced
    .25 cups paremon cheese, light
    1 cup cheddar cheese, grated

Directions

Steam together cauliflower, onions, garlic & celery.
Combine with soup, chopped spinach and lean meats.
Spray inside of casserole dish & put mixture inside.
Top with cheese and bake at 350C for 25-35 minutes.
