Introduction

Number of Servings: 12

Ingredients

    *Bob's Red Mill Bulgar Wheat 1 cup
    Parsley, 3 cup
    Spearmint, 3 tbsp
    Scallions, raw, 3 medium (4-1/8" long)
    Pepper, black, .25 tsp
    *1/2 tsp. Cumin Powder, .5 serving
    Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
    *Lemon Juice, 1 fl oz
    Olive Oil, 2 tbsp
    Cucumber (peeled), 1 medium

Directions

* To presoak Bulgur: Place 1 cup Bulgur in bowl. Pour 1 cup boiling water over Bulgur and let stand for 1 hour. Yields 2 cups presoaked Bulgur.

Gently mix: Chopped parsley, mint, scallions with ddrained bulgar. Dice tomatoes and cucumber tossing with the other ingredients.

Mix Olive Oil, lemon juice, cumin, pepper tossing with bulgar mix. Chill at least 1 hour.

Serving Size: 12 1/2 cup servings
