Chocolate Chip Banana Oat Muffins

Introduction

Ingredients

    1 3/4 cups Robin Hood Nutri Blend Flour
    1/2 cup Robin Hood Quick Oats
    1/2 cup brown sugar, packed
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    2 eggs
    3/4 cup buttermilk (or non-fat milk plus 1 tbsp vinegar)
    2 tbsp vegetable oil
    2 tsp vanilla extract
    1 1/2 cups mashed bananas
    1/3 cup Heshey's Chipits Mini Semi-Sweet Chocolate Chips

Directions

1. In a large bowl, combine dry ingredients: flour, oats, sugar, baking powder, soda, and salt.
2. In a medium bowl, beat together eggs and brown sugar on medium speed of an electric mixer for two minutes. Add bananas, buttermilk, oil and vanilla. Beat again until well blended.
3. Add wet ingredients to dry ingredients and mix just until dry ingredients are moistened. Do not use an electric mixer for this step. Fold in chocolate chips. Do not overmix batter.
4. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
4. Bake at 350F for 30 minutes or until toothpick comes out clean
