Fruity Rice Pudding

Number of Servings: 5

Ingredients

    1 cup water
    1 cinnamon stick
    1 T butter
    1/2 apple, chopped
    1/2 pear, chopped
    1 cup arborio rice
    2 cups nonfat milk
    1/2 cup unsweetened vanilla almond milk
    1/4 cup splenda
    1 tsp vanilla extract

Directions

Bring first five ingredients to a boil. Add rice, reduce heat to medium. Stir occasionally for about 10 minutes; until almost all of liquid is absorbed. Add splenda and milk (use any type of milk you want, I just happened to have that combination). Reduce heat to medium-low and stir frequently, until it is creamy and has thickened - about 25 minutes. Remove from heat and add vanilla.

Makes about 5 servings of 1 cup each
