These fluffy quiches are filled with veggies and are perfect portion control. Just pair a couple of quiches with some protein like sliced turkey or nut butter on a slice of whole grain bread and you have a satisfying healthy meal. Ingredients

6 large eggs
3 tablespoons heavy whipping cream
.5 cup shredded 2% milk cheese
1.5 cups water
10 ounces of frozen chopped spinach (defrosted)
2 cups chopped mushrooms
3 cloves minced garlic
2 teaspoons salt
1 teaspoon black pepper
Directions
Preheat oven to 350 degrees
Combine all ingredients in a large bowl, making sure ingredients are well mixed and evenly distributed.
Spoon egg mixture evenly into 24 well greased muffin tin openings.
Bake for 35 minutes at 350 degrees or until slightly brown.
Remove from oven and let cool before enjoying your delicious mini quiches!
