Sweet and Spicy Cole Slaw

Ingredients

    2 lbs cabbage (green or red or both) shredded
    4 carrots, grated
    1 medium yellow onion
    1/2 C Hellman's light mayonnaise
    1/4 C yellow mustard
    2 tsp Apple Cider Vinegar
    2/3 C granulated sugar
    1/2 tsp cayenne pepper
    1/2 tsp black pepper

Directions

1. Shred the cabbage by hand (a food processor may make it too fine and then it become very watery)
2. Grate the carrots and onion. Toss cabbage, onion and carrots together.
3. In a separate bowl, combine mayo, mustard, vinegar, sugar, and pepper. Whisk together.
4. Combine all ingredients. Chill before serving for 2 hours.
