Bean Soup with a Kick

Ingredients

    2 C chicken broth
    2 C water
    1 can black beans,drained
    1 can pinto beans,drained
    1 can corn, drained
    1 cabbage head, chopped
    1 onion, diced
    2 Tbsp olive oil
    1 can fire roasted tomatoes with chilies
    2 6 oz cans spicy V8

Directions

Heat olive oil in pan. Saute onions until soft about 3-4 minutes. Add broth, water, tomatoes, corn, V8, beans, and green chilies. Cook 15 minutes. Add cabbage and cook another 20 minutes until cabbage is softened.
