Turkey and Risoto Stuffed Peppers

Ingredients

4 large peppers (your choice as to color)
1 large stalk celery
1 package Trader Joe's Mushroom Risoto
1 pound lean ground turkey
3 slices pepperjack cheese
Directions
Chop 1 pepper
Chop celery
Cut the top off of remaining 3 peppers and clean out inside
Brown ground turkey with celery and chopped green pepper
Season to taste
Cook Mushroom Risoto per package instructions
Place 3 peppers in a casserole dish so that they are supported by each other and will not fall over.
Combine ground turkey and risoto together, and spoon into 3 large peppers fill each to the top.
Cover peppers in dish with foil, and bake for approximately 30 minutes in 375 degree oven, until peppers are tender.
Remove from oven, remove foil from dish, and place one slice of Pepper-Jack cheese on each pepper. Return to oven for just a few minutes, until cheese is melted and bubbly.
Serve with your favorite steamed veggie side dish.
