Yams in raisins & apples

Ingredients

    Apples, fresh, 0.5 cup, quartered or chopped
    Butter I can't believe it's butter, 2 tbsp
    Apple juice, unsweetened, 0.25 cup
    Raisins Mariani, 1.5 oz
    Sweet potato, 1.5 sweetpotato, 5" long
    Cinnamon, ground, 1 tbsp
    Nutmeg, ground, 1 tsp
    Vanilla Extract, 1 tbsp

Directions

Peel one large yam, cut into round chunks. Boil about 20 minutes or prior to becoming soft. Cool & cut in 1/4 inch to 1/2 inch rounds. While yam is cooking, core small apple and cut into slices. Layer in baking dish yam, then apples until all have been put in dish. Pour apple juice, vanilla, cinnamon and nutmeg over them . Coat top of mixture with butter. Bake in 350 degree oven for about 30 minutes. First 15 minutes cover so they don't burn. Uncover for last 15 minutes.

Serving Size: Makes about 6 servings 1/2 cup each
