Thai Coconut Shrimp Soup

Introduction

Ingredients

    4 cups water
    4 strips lime peel
    1-inch chunk raw ginger, sliced
    1 stem lemongrass, halved lengthwise
    9 oz shrimp, cooked
    1 can coconut milk
    juice of 2 limes
    1 tablespoon Thai fish sauce

    Garnish: cilantro leaves, chili oil if desired (not calculated in calories)

Directions

Cook the lime peel, ginger, and lemongrass in water. When it boils, reduce heat and add shrimp, coconut milk, fish sauce, and lime juice. Simmer for ten minutes and serve.
