Fresh Apple Upside Down Cake

Ingredients

    Topping:
    5 fresh apples, peeled and slice
    2/3 cup brown sugar
    1 tsp cinnamon
    4 T melted Olivani Lite (spread made with olive oil)

    Cake:
    1 3/4 GF flour
    1/4 tsp salt
    2 tsp baking powder
    1 tsp cinnamon
    1/2 cup Olivani Lite
    3/4 cup sugar
    2 large eggs
    1 tsp vanilla
    2/3 cup milk

Directions

Heat oven to 160C.
Grease tin.
Cut apples & combine with brown sugar, cinnamon & melted marge. Arrange at bottom of tin.
Combine GF flour, baking powder, salt & 2nd measure of cinnamon.
Beat marge with white sugar until fluffy.
Beat in eggs & vanilla.
Add flour mixture & milk alternately to butter and egg mixture until blended.
Spread over apples.
Bake for 45-60 mins or until skewer comes out clean.

Serving Size: Cut into 12
