Penne Primavera (broth based)

Ingredients

    Olive Oil, 1 tbsp
    Garlic, 2 cloves (crushed)
    Lima beans, baby, unprepared, 0.5 cup
    Sweet Corn, Fresh, 1 cup
    Carrots, 1 cup
    Vegetable Broth, 2 cup
    Barilla Plus Penne, 8 oz
    Peas, frozen, 0.5 cup
    Parmesan Cheese, grated, 0.5 cup
    Broccoli, fresh, 1 cup, chopped
    Summer Squash, 1 cup, sliced

Directions

Heat olive oil and garlic in a large skillet over medium heat. Remove garlic before it turns brown. Place the broccoli, carrots, and squash in the skillet and cook 2 minutes.
In a pot bring the vegetable broth to a boil. Stir in the pasta and heated garlic. Cook for 5 minutes. Remove garlic cloves. Transfer the broth and pasta into the skillet. Mix in the rest of the vegetables. Cover and cook for another 10 minutes or until the vegetables are the desired tenderness. Sprinkle parmesan on top.
