Introduction

OUTRAGEOUSLY GOOD!!!!!

YES...you are reading this right....TOMATOES & PEACHES!!!!!

Chef Bittman made a similar soup on the Today show...my friend doesn't like onions or garlic, so I modified this to use ginger and curry powder instead....

Original recipe called for adding 1 medium onion (chopped) and sauteing it in some olive oil, before adding tomatoes and peaches and cooking....and the chef did not add the curry powder or ginger...he just garnished it with fresh tarragon...(he also added 1/2 of cream...but I don't find that necessary)...haven't made it that way yet..."my" version has just been too good to pass up!

NO WATER IS ADDED to this soup...just uses the natural liquid from the fruit.

Ingredients

    2 LBs tomatoes, chopped large
    1/2 LB peaches, chopped large
    1 TBSP curry powder
    6 pieces candied ginger, chopped (or 1 TBSP fresh ginger)
    2 TBSP chopped fresh basil -or- 1 TBSP dried basil

Directions

1) Put everything in a 2 QT saucepan and simmer until tomatoes and peaches are soft.
2) Puree with stick blender (or use regular blender, being careful to blend in small batches and cover blender with a tea towel before blending).
3) Serve warm or cold.


Serving Size: 8 (1.5 cup) servings
