Baked Chicken Tortillas

Introduction

A great way to use leftover cooked chicken breast. A great way to use leftover cooked chicken breast.
Number of Servings: 6

Ingredients

    1 cup bottled salsa, divided
    8 oz fat free sour cream
    6 (10-inch) flour tortillas
    1-1/2 cups chopped cooked chicken breast (about 3/4 pound)
    1/3 cup chopped tomato
    1/3 cup chopped green or red bell pepper
    1/4 cup chopped onion
    Cooking spray
    3/4 cup (3 oz) shredded reduced-fat cheddar cheese

Directions

Preheat oven to 350.
Combine 1/2 cup salsa and sour cream in a small bowl, and spread evenly over each tortilla.
Divide chicken, tomato, bell pepper, and onion evenly down center of each tortilla, and roll up.
Place rolls, seam sides down, in an 11 x 7-inch baking dish coated with cooking spray.
Top with 1/2 cup salsa.
Bake at 350 for 15 minutes.
Sprinkle with cheese; bake an additional 5 minutes or until cheese melts.

    We loved it. I did modify it a bit. I sauted the onion, Peppers and added bit of garlic in cooking spray until soft. I used leftover turkey instead of chicken. Excellent dinner to use leftovers! - 11/1/10

    Great recipe! I used frozen mixed pepper strips and put the salsa Inside the tortillas, then poured an 8oz can of jalapeno tomato sauce over the rolled tortillas. I am always looking for ways to use leftover chicken. Thanks! - 7/29/09

    Great recipe ! I left off the cheese and substituted the sour cream for nonfat yogurt to save some calories. It tasted fantastic. Next time i'll also try some variations with adding some mushrooms and maybe some garlic. But i love it and it's easy to make. - 6/7/08

  • This is very very good!!!! My hubby is not a fan of chicken but he absolutely loved it. I didn't have any fresh onions on hand so I usded onion powder and I omitted the tomatoes and sour cream b/c my family won't eat them. I also used the small soft taco shells and the result was amazing!!!!!!!! - 4/9/12

  • I am new to cooking and eating healthier and this was easy and delicious. I added some chopped pickled jalepeno peppers & used whole wheat tortillas. It freezes well and tastes just as good reheated, which is something I look for in a recipe (am single and don't like to cook every day). - 7/10/11

  • I just made this tonight, and it's so good! I omitted the salsa and cheese on top and added a little dab of the sour cream/salsa mixture and black olives to the top after it came out of the oven.   • Thanks! This was really good. I went with some suggestions and used corn tortillas, sauteed the onions and peppers, garlic, extra hot sauce and nonfat yogurt. Also added fresh mushrooms and sage that I had on-hand. Really fresh and satisfying! - 4/24/08
