Garlicky Pasta with Spinach, Tomatoes, and Feta

Introduction

Delicious and easy weeknight dinner -- and loaded with vitamins Delicious and easy weeknight dinner -- and loaded with vitamins
Number of Servings: 4

Ingredients

    8 oz. (4 servings) whole wheat penne pasta
    1 tsp. olive oil
    4-6 cloves (or to taste!) garlic
    10 oz. fresh baby spinach
    6-8 fresh ripe tomatoes, chopped
    6 oz. reduced fat feta cheese, crumbled
    salt and lots of black pepper to taste

Directions

Cook pasta according to package directions, or to taste. Drain and reserve.

Heat 1 tsp. olive oil in pan (can be same one you cooked noodles in for quick easy clean-up) and saute garlic cloves briefly. Add chopped tomatoes and spinach and toss for 1-2 minutes, until spinach is just wilted and tomatoes are softened. Add noodles, salt and pepper, and feta cheese. Toss thoroughly, and serve! It's YUMMY!
