Chicken Taco Cupcakes

Introduction

These are super easy and fun to make! Great for lunch, dinner, a party dish, snack etc... :) Enjoy!! This recipe was inspired from the Hungry Girl Lasagna Cupcakes recipe. Number of Servings: 12

Ingredients

    - 2 100 Calorie Packets of Classic Wholly Guacamole
    - 2 Chicken Breasts
    - 2-4 tablespoons of Fresh Salsa
    - 2 Green Onions Chopped (~ 1/4 Cup)
    - 1 Cup Refried Beans
    - 1/2 Cup Shredded Cheese
    - 24 Wonton Wrappers (like those by NaSoya)
    - Pam cooking spary (EVOO)
    - Chili Pepper, Cayenne Pepper, Black Pepper, Garlic Salt, Taco Seasoning, Onion Powder, Garlic Powder, and Cumin to taste...

Directions

1. Set oven to 400 degrees
2. Put Chicken Breasts in a Boiling pot of water for ~10-15 minutes. Once fully cooked, take it out and shred it with a fork.
2. Add seasonings to taste to the chicken and mix.
3. In a separate bowl add both packets of the guacamole and the salsa. Mix and season to your liking. Also, in a separate bowl mix your beans and some seasonings if you want to add more flavor to them.
4. Get a cupcake pan and spray each section with PAM.
5. Get your wonton wrappers and place one in each cupcake slot and press it down to fit.
6. Add about 1/2 tablespoon of your gucamole and salsa mix to each won ton wrapper, then add about 1 tablespoon of your shredded chicken, and sprinkle your green onions on top.
7. Now place another wonton wrapper on top of your shredded chicken/green onion layer and press it down to shape around it.
8. Now add about 1/2 tablespoon of your bean mixture to each new wonton wrapper layer and top them all with cheese.
9. Put in the oven for 10 minutes.
10. Let them cool for about 1 minute and serve.

Serving Size: Makes 12, 1 Cupcake servings
