Mini Crustless Quiche

Ingredients

    1/2lb Ground turkey, 93% lean, 8 oz
    1/2 cup Spinach, cut
    1/4 cup Onions, chopped
    1/2 cup Mushrooms, chopped
    3/4 cup Almond Milk, Original
    1/3 cup Veggie Shreds Cheddar Cheese
    1/2 tsp Garlic powder
    1/4 tsp Fennel seed
    1/4 tsp Pepper, black
    3/4 cup Egg substitute
    1 large Egg

Directions

Cook lb. meat with garlic powder, pepper & fennel seed works well.

Saute mushrooms, white onion, spinach. Mix together with 1/3 cup cheese of choice. Set aside.

Whisk 1 egg and cup of egg substitute, cup milk, and pour into muffin tins. (Use foil cups if desired.) Add meat and veggie blend to each cup of egg mixture.

Bake at 325 degrees Fahrenheit for 25 minutes or until golden brown.

These can be stored in the fridge until they are ready to be eaten.
