Rice Pudding with Dates

Ingredients

    2 C cooked basmati rice
    2 C Trader Joe's coconut milk beverage unsweetened
    4 T brown sugar
    12 dates, pitted & chopped

Directions

Coarsely grind cooked rice in food processor or blender. Do not puree. Place in a medium size saucepan and stir in the milk, sugar & dates. Cover and cook over low heat, stirring occasionally until the dates are tender, about 20 mintues. Serve warm with fresh fruit and Greek God's Honey Yogurt (optional and not figured into the nutrient calculation.) May be served hot or cold. Try dusting each serving with a little cinnamon.
