Do you like Lean Cuisine's Santa Fe Black Bean entree? This tastes an awful lot like that - creamy, spicy, delicious, but most of all, super easy!!
1 can corn, rinsed
1 can black beans, rinsed
8 oz. chunky or garden style salsa
1 package Neufchatel cream cheese (8 oz)
2 poblano peppers, roasted and chopped
1 bell pepper, chopped
1/3 c. chopped red onion
salt, pepper, and spices to taste
1 tsp. olive oil
Add corn, black beans, roasted peppers, salsa, cream cheese, and spices. Heat over medium heat, stirring often, until heated through.
Serve over brown rice (not included in nutritional info). Garnish with fresh avocado if desired.
