Mashed Cauli-Taters

Introduction

diabetic friendly, mashed cauliflower as substitute for mashed taters diabetic friendly, mashed cauliflower as substitute for mashed taters
Number of Servings: 6

Ingredients

    1 bag frozen cauliflower floretts(approx 6 cups)
    1 Cup shredded sharp cheddar cheese
    2 tablespoons FF sour cream
    Salt & Pepper to taste

Directions

Steam/boil/microwave cauliflower until it is very soft.
Drain Water
Use potato masher to mash the cauliflower until it is fairly smooth (I like to keep my a little chunky)
Add cheese, sour cream and salt/pepper and stir.
