Crockpot Chicken Curry

Introduction

Perfect over Jasmine rice! Perfect over Jasmine rice!
Number of Servings: 10

Ingredients

    5-6 frozen chicken breasts
    Curry powder (10 tbsps) or 1 can of curry paste
    Bamboo shoots (2 cans)
    Waterchestnuts (2 cans)
    1 Head of cauliflower
    Chicken broth, 1 can
    1 can of coconut milk (Taste of Thai, light)

Directions

Put all ingredients into a crockpot on low for 6-8 hours
When cooked, shred chicken with a fork.
Serve over Jasmine rice or a plate of steamed veggies (values not counted in recipe)
Add fresh basil or green onion

Serving Size: Makes roughly 8 generous servings
