Holford Diet Apple & Tuna Salad

Introduction

Healthy tuna salad. Low GI. Tastes great on wasa rye crispbread. Healthy tuna salad. Low GI. Tastes great on wasa rye crispbread.

Ingredients

    6 ounces water-packed tuna, drained
    1 apple, chopped
    1 stalk celery, sliced
    1 miniature Romain lettuce, ripped into bite-sized pieces -OR- some frozen spinach
    1 Tbsp low-fat mayonnaise
    3 ounces natural live yogurt
    2 tsp lemon juice
    sea salt
    black pepper

Directions

Drain the tuna and mix well with the apple, celery, lettuce or spinach, yogurt, mayonnaise, lemon juice and season to taste.

Serving Size: makes about 4 servings
