Blueberry Pudding

Introduction

My mom made this every year with fresh blueberries we picked ourselves. My mom made this every year with fresh blueberries we picked ourselves.
Number of Servings: 10

Ingredients

    Pudding:
    1/3 cup butter
    2 large Eggs
    2 1/2 tsp Baking Powder
    1 cup Blueberries
    2/3 cup Splenda (or Sugar)
    2 1/3 cups All Purpose Flour (unbleached)
    1/3 cup 1% Milk

    Caramel Sauce:
    2 tsp Butter
    1/2 cup Brown Sugar
    2 tsp All Purpose Flour All Purpose (unbleached)
    1 cup boiling Water

Directions

Cream butter and splenda (sugar). Add eggs, baking powder, flour and milk. Once this is all mixed, fold in blueberries (gently so they don't get too mushed).

Bake at 350 until light brown on top.

For Sauce:
Melt butter & flour together and stir in remaining ingredients until the sugar is dissolved. Pour onto pudding as desired.

Serving Size: Makes about 10 servings
