1/2 cup flour
2 tbsp wheat germ
2 tbsp wheat bran
2 tbsp rolled oats
2 tbsp vegetable protein
1 tbsp bulgar, ground in food processor or coffee grinder
2 tsp baking powder
1/4 tsp salt
3/4 cup milk (or soy milk)
1/2 cup water
1/4 cup safflower oil (or vegetable oil)
1/2 tsp vanilla extract
1 3/4 tbsp granulated sugar
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1. Place all dry ingredients in a medium bowl, whisk together to break up any lumps and thoroughly mix the dry ingredients.
2. Add the milk, water, safflower oil, and vanilla. Whisk together.
3. Add 1-2 tbsp of sugar (to taste) and spices, whisk into batter.
4. Heat a skillet over medium heat. Add 1/4 cup of batter for each pancake to skillet. Brown on each side and serve warm.
