Katey's Crock-pot Stroganoff

Ingredients

    2.3 lb beef round, cut into 1-in cubes
    2 T vegetable oil
    1 can cream of mushroom soup
    1 soup can beef broth
    1/2 large red onion, sliced
    8 oz light sour cream

Directions

Cube beef and sear in 2 T vegetable oil. Transfer to crockpot.

Add 1 can cream of mushroom soup, and 1 can of beef broth.
Slice 1/2 large red onion and add that.

Cook on low for 8 hours. Add sour cream just before serving.

Serve over hot noodles, rice, or toast (not included in recipe calculations)
