This wonderful chili has a thick, satiny texture, I love. I sometimes will cook a chicken breast and add it to the bowl for extra protein in the dish, but it is really a hardy chili without it. Ingredients

Zucchini, 1c sliced
Onions, 1c chopped
Celery, 1c diced
Carrots, 1c chopped
Frozen Corn, 1c
Jalapeno Pepper, 1 seeded and chopped
Unsalted Butter, 2 Tblsp
White Beans, 1- 15oz can, Rinsed & drained
Canned Chicken Stock, 28 fl oz
Canned Pumpkin, 1-15oz can
Real Bacon Bits, 3 Tblsp
Chili Powder,1 Tblsp
Cilantro, 3Tblsp chopped
Fresh Garlic, 1-2 cloves
Directions
Over medium, heat a large dutch oven with lid, saute the zucchini, onions, celery, carrots, corn, garlic and the jalapeno pepper in the butter, for a few minutes, then add the rest of the ingredients and simmer to meld flavors. Serve with crusty bread or grilled cheese sandwich. ENJOY!
