Introduction

This was my first attempt at recreating a wonderful dish we had at a cafe (Chez Plumeau) in Montmartre in Paris. I first googled some recipes but all of the Americanized versions are different from what we had in that they're not cooked. So I decided to wing it and it turned out REALLY yummy. This is very simple, you can change up the toppings as you wish. I left this one vegetarian for my darling daughter. This is best in the summer with fresh veggies from the garden and cooked on the grill. It pairs great with a salad and a glass of chilled wine.

Ingredients

    3, 2-oz. slices of a wheat based artisan bread (I used a nine grain bread in the shape of a boule)
    1 small red onion sliced into rings (or a small sweet white onion -- a walla walla is divine!)
    1 large baby zucchini sliced lengthwise
    1 heirloom tomato cored and sliced thinly into 6 slices
    3, 1-oz. wedges of chevre cheese (I recommend the Chevre with Sundried Tomatoes and Basil)
    6 small sprigs of fresh basil

Directions

To prepare on grill:
Spray the grill with nonstick cooking spray and lay the slices of onion and zucchini right on the grill. Cook just for 2-3 minutes per side or until tender. Remove from heat and set aside. Put the slices of bread on the grill and toast lightly, just a minute per side or so. Remove from grill and spread each slice of bread with one wedge of the chevre cheese. Layer on the grilled zucchini and onions then top each tartine with 2 slices of tomato. Place 1 sprig of basil on top of each tomato. Return to the top rack of the grill, close the lid and let cook for about 5 minutes or until the cheese is warmed and the tomatoes are soft.

To prepare in the oven:
Preheat oven to 400. Cook the zucchini and onion in a saute pan coated with nonstick cooking spray over medium heat just until tender -- do not overcook! Remove from heat.
On a baking sheet, arrange the bread pieces and toast for 1-2 minutes per side in the oven. Remove from the oven and spread each piece with 1, 1-oz. wedge of the chevre. Arrange zucchini on top of bread then layer with onions. Add 2 tomato slices per tartine. Place a sprig of basil on top of each tomato. Bake at 400 for approximately 10-15 minutes or until the chevre is gooey and golden around the edges.

Makes 3 tartines or 3 servings.
