Mexican Casserole Fast and Easy

Introduction

I use leftover meatloaf for this and it makes a great Saturday dinner. Also chopped leftover roast works as well. Can also toss in some corn if you want. Number of Servings: 8

Ingredients

    1 lb leftover meat loaf or cooked ground beef
    6 oz lightly salted tortilla chips, broken up
    2 oz jalapeno jack cheese
    2 oz sharp cheddar
    1 can fat free refried beans
    2 cups salsa

Directions

Cut the meatloaf into small pieces, or crumble the ground beef. Could just fry it up if using uncooked beef. Mix the beef and the beans together. Grate the cheeses together. Layer crushed chips, bean and meat mix, salsa and cheese for a couple of layers. I end with a layer of salsa, saving the top layer of cheese. Add leftover cheese 10 minutes before done.
Serve with extra salsa, sour cream, whatever you want.
