Crowned Swai For One

Introduction

This is my variation of the recipe "Crowned Fish" found in the American Heart Association Cookbook. I was out of fresh basil so I used Pesto instead. This is my variation of the recipe "Crowned Fish" found in the American Heart Association Cookbook. I was out of fresh basil so I used Pesto instead.
Number of Servings: 1

Ingredients

    One 4oz fillet Swai fish
    1 cup water
    one wedge lemon or a few drops lemon juice
    2 slices Large fresh tomatoe
    1/4 green pepper cut into slivers
    one thin slice onion
    one tablespoon Italian spiced bread crumbs
    1/8 teaspoon pesto

Directions

Freshen fish several minutes in mixture of water and lemon juice. Rub lightly with pesto and place in baking dish sprayed with oil. Place green pepper slices, Onion slice, and tomatoe slices on top of fish. Sprinkle with italian seasoned breadcrumbs. Bake at 350 degrees fo 15 minutes.
