Protein Packed Chewy Pumpkin Granola Bars

Ingredients

    2-2/3 c Great Value Oven-Toasted, Old-Fashioned Oats
    1/2 c Bob's Red Mill Whole Grain Soy Flour (35% Protein)
    30 g (1 scoop) Vanilla Whey Protein Powder with Stevia
    1/4 c Bob's Red Mill, Natural Raw, Ground Wheat Germ
    1/4 c Bob's Red Mill, Whole Ground Flaxseed Meal
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/4 tsp ground cloves
    2/3 c Great Value Dried Cranberries
    1/4 c Great Value Dried Cherries
    1/2 c Fisher Chopped Pecans
    1/2 c Fresh Frozen Tropic Isle Coconut (thawed)
    1 c Libby's 100% Pure Pumpkin
    1/2 c honey
    1/2 c Light Vanilla Silk Soymilk

Directions

Combine Oats, Soy Flour, Protein Powder, Wheat Germ, Flaxseed Meal, Cinnamon, Nutmeg and Cloves. Incorporate well. Add Pecans and coconut - incorporate well. Stir in Cranberries and Cherries.
In micro safe container, heat honey and pumpin 30 seconds. Mix well. Add soy milk. Stir well or knead into dry mix - about 5 minutes!
Spray 13.9 baking pan with non-stick baking spray. Scoop mix into pan and pat firmly - try to keep edges even with center.
Bake 350* oven 20 - 25 minutes.
