Garden Chowder

Number of Servings: 10

Ingredients

    1/2 cup green pepper
    1/2 cup chopped onion
    1/4 cup butter
    1 cup diced potatoes
    3 cups vegetable broth
    1 tsp salt
    1/4 tsp pepper
    1 1/2 cups cheddar cheese
    1 cup celery
    1 cup cauliflower
    1 cup carrot
    1 cup broccoli
    1/2 cup flour
    2 cups milk
    1 tbsp parsley

Directions

Saute green pepper and onion in butter until tender. Add vegetables, broth, salt and pepper. Bring to boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are tender. Combine flour and milk until smooth. Stir into pan. Bring to boil. COok and stir for 2 minutes. Just before serving, add parsley and cheese adn stir until melted.
