Chicken with Broccoli Pasta

Introduction

Easy healthy pasta dish. Easy healthy pasta dish.
Number of Servings: 4

Ingredients

    1/2 lb chicken breast, chopped
    8 oz whole wheat pasta
    300 grams broccoli (4 cups)
    1/2 cup chopped onion
    4 cloves garlic, minced or crushed
    1 tbps olive oil
    1 tsp grated lemon zest (optional)

Directions

makes 4 servings

Cook pasta according to package directions. While pasta is cooking, saute onion & garlic in olive oil until onion is translucent. Add chicken and sautee until chicken is thoroughly cooked. If pan is too dry, add a bit of the water from the cooking pasta, a few tablespoons at a time, just enough to keep things from sticking. At same time, steam broccoli just until it is bright green and slightly tender.

Drain pasta and toss everything together. Serve with Parmesan cheese sprinkled lightly on top.

  • This recipe was SO easy and delicious. I seasoned the chicken before cooking and it added more flavor. I also added some diced tomatoes but it gave the dish too much of an acid taste, I wasn't sure how to fix that. Next time I will leave out the tomatoes. - 1/8/08
