Garlicky Peppery Shrimpy Rice-y

Introduction

Sautéed garlic, shrimp, a diced green pepper and scallions with a pureed mixture of baby peppers served over rice. Sautéed garlic, shrimp, a diced green pepper and scallions with a pureed mixture of baby peppers served over rice.
Number of Servings: 4

Ingredients

    Shrimp, raw, 50 medium
    Garlic, .25 cup
    Scallions, raw, 4 medium (4-1/8" long)
    Baby Peppers (Red & Orange) 3 peppers per serving, 4 serving
    White Rice, long grain, 2 cup
    Olive Oil, 1 tbsp
    Green Peppers (bell peppers), 1 cup, strips

Directions

Thaw & remove shrimp tails.
Wash, de-seed peppers - dice the green pepper and set aside. Puree the baby peppers into a slushy liquid.
Boil rice and let steam on Low; stir occasionally.
Heat wok on Medium heat.
Add oil
Sauté the scallions & garlic, then add the shrimp and the green peppers.
Once the shrimp is cooked pink, add the baby pepper puree and stir until warmed through.
Serve over rice.
