Lamb & Feta Kofta

Number of Servings: 4

Ingredients

    2 thick slices white bread made into breadcrumbs
    4 Tbl milk
    500g lamb mince
    100g feta, finely crumbled
    Grating of fresh nutmeg
    2 cloves garlic, crushed
    1 egg white, lightly beaten
    1 tsp ground cumin
    1/4 tsp ground cinnamon
    Finely grated zest 1 lemon
    1/4 cup finely chopped parsley\
    Sea salt & freshly ground pepper

Directions

Preheat oven to 180C

Place the breadcrumbs in a large bowl with the milk. Add all the remaining ingredients, season and mix unti well combined.

Roll the mixture into balls and place in a baking dish. Spray lightly with olive oil spray and bake for 20 minutes.

Serve with cos lettuce, sliced seeded tomato, yoghurt, eggplant hummas & warmed pita.
