Introduction

Recipe from Real Simple Magazine. Great for picnics. chicken can be served hot, room temperature, or chilled. (Just beware of bacteria. Don't leave at room temperature too long.)

Number of Servings: 6

Ingredients

    1 1/2 pound boneless skinless chicken breast, cut into strips
    1 TBsp olive oil
    1 TBsp chili powder
    1 TBsp brown sugar
    1 tsp ground oregano
    3/4 tsp salt
    1/4 tsp black pepper

Directions

- Heat oven to 400 degrees.
- In a small bowl, combine the oil, chili powder, sugar, oregano, salt, and pepper.
- Pat the chicken dry with paper towels. Place chicken in a roasting pan and rub with the spice mixture. Roast until cooked through - 20-30 minutes.
- Serve hot, room temperature, or chilled.

Makes 6 large 1/4-pound servings.
