Celery Salad with Blue Cheese & Walnuts

Introduction

I have never been a real raw celery fan because to me it has a kind of bitter taste, so I almost didn't try this recipe. Boy, am I glad I decided to be adventurous and try it anyway. It has become one of our favorite salads. There is something about the dressing that takes all bitter out. Enjoy! Number of Servings: 4

Ingredients

    DRESSING
    2 1/4 teaspoons apple cider vinegar
    3/4 teaspoons dijon mustard
    1/8 teaspoon pepper
    3 tablespoons olive oil

    SALAD
    1/2 a bunch of celery, leaves and all
    1/3 cup crumbled blue cheese
    1/3 cup chopped walnuts

Directions

IN a small bowl combine all of the dressing ingredients, except the olive oil. Stir to combine.


VERY, very slowly (just a drop or two at a time) whisk the olive oil into the other dressing ingredients. Set dressing aside.


CUT each celery rib down the middle and then slice the ribs into 1/4-inch thick pieces. Coarsley chop the celery leaves. Place celery and leaves into a medium to large bowl.


ABOUT 15 minutes prior to serving, add the blue cheese and walnuts to the celery. Pour the dressing over the celery mixture, stir gently to combine and refrigerate.


NOTE: This salad does not store well, so just make enough to serve at one meal. It is not that it doesn't taste just as great the next day, but the blue cheese & celery turn a kind of unappetizing grey color. Not very pretty.

Serving Size: Makes 4 (approx) 3/4-cup servings
